Stream Bank Flies

Channel Catfish in unlikely place! Help!?
I have been coming across a few channel cats in a very small stream that is special trout regulation waters (delayed harvest; fly fishing only). The Channel Cats are up above the honey holes, just laying in water about 2 feet deep. From the looks I've taken from the bank, they are between 20" and 30". I'm not sure how to go about catching these guys. I'm not sure if i'd spook them during the day and getting there at night is a trick and a half. Bait-wise, I was thinking I would anchor a creek chub or black nosed dace down with a dipsy sinker. Any suggestions? It's all welcome.
The Creek Chub is a great idea. That's the most natural thing you can throw at them in a stream, being that they are probably their number one food source. You shouldn't spook them as long as you keep your distance. If it were me, I would do just what you said; Get a decent sized weight and make fairly long casts towards them. If they don't happen to want the Creek Chub, you may consider trying some kind of cut bait. Channel Catfish love cut bait in my area, more so than a live baitfish a lot of times.
